Breakfast Ideas (BI 1. Breakfast Granola)



Not my original recipe, but a most delicious way to start the day! When teaching about cereals to Grade 7 Home Economics classes, they decided to name it “Grade Seven’s Lazy Breakfast!”
Fresh coconut is a key ingredient.

You will need:
2 cups of fresh, grated coconut
2 cups of rolled oats
1 cup flour (white works, but wholemeal is better of course)
Dried fruit


Method:
Mix all ingredients thoroughly adding a little water or coconut juice to get it all “bound” together. Spread into trays and at a low oven temperature bake for ~ 1 ½ hrs, stirring frequently – until it is dry and crunchy.
Add chopped dried raisins, dates, bananas or other to taste.
Serve soy drink, milk or fruit juice.
Note – to get fresh, grated coconut in Australia or USA you may need to experiment with food processors.
Crack the hard shell of a brown coconut and then prise out the white “meat” with a strong butter knife.
Place small pieces of the “meat” in a food processor and hopefully it will get grated fairly finely.
In Singapore, frozen fresh grated coconut is available in supermarkets.
