These are the equivalent of salted beer nuts first seen served on a bar counter in a resort hotel in Fiji where we stayed in 1989.
You will need:
1 whole brown coconut
Salt to taste.
Method:
Crack the coconut (on concrete paving is probably safest).
Gently prise out the white coconut “meat” from the shells. Try to keep it in big pieces.
Using the flat part of a hand grater (ie. The part you might use for potato scallops) carefully grate slivers of coconut, keeping them as big as possible.
Spread the coconut slivers on an oven tray, sprinkle with salt and bake in a moderate oven for ~ 10 mins, turning (stirring) after 5 mins (should be tinges of brown on some of the slivers when done).
Great for a party!
