SD 5. Potato Salad with Coconut dressing



Can be eaten warm or cold.
Sweet potatoes are cheaper and give sweetness (without adding sugar), so we usually boil 50/50.

You will need:
Irish potatoes (or English, or Australian or white, or whatever!)
sweet potatoes (white or yellow)
capsicum
red onions
spring onions
lime or lemon juice
salt
fresh or dried basil or other herbs, e.g.. mint
corn kernels.

Method:
Boil and dice potatoes, finally chop other ingredients and mix together with coconut cream. Allow to stand, as flavour improves over ½ hr or so. Shreds or grated carrot add colour too.
