I wanted to make a crust for fruit pie with no sugar and low fat (quantities are approximate).
You will need:
Flour – 2 cups
Salt – ¾ tsp
Raw sesame seeds – 2 dsp
Crushed peanuts – 2 dsp
Grated glace ginger – 2 dsp
Instant yeast – 1 heaped tsp
Oil – 1 dsp.
Warm water ~2/3 – ¾ cup.
Method:
Mix all dry ingredients and rub oil into it.
Gradually add warm water to make a soft and malleable dough.
Stretch out / roll and press into an oiled pie plate.
Allow to rise 10 mins
Bake in moderate oven for 15 minutes until top is dry and edges are browning.
Cool a little, then add filling (We tried mangoes with coconut cream, and agar powder to thicken it).
*Could be used for a savoury vegetable pie also.
