ES 5. Green Mango Salad


This idea came from “The Balcony Cafe” a favourite place to go for a family meal out. Not sure why ours never looks or tastes the same as at the Balcony!

You will need:
Unripe mango (very firm)
Tomato
Capsicum
Spring onions (green onions)
Crushed peanuts
Garlic crushed
Cucumber and lettuce for serving.
Salt and soy sauce to taste
Fresh Asian basil leaves.


Method:
Grate or shred mango.
Finely chop tomato and capsicum and spring onions.
Add remaining ingredients and lime juice if needed.
