SD 7. Macaroni (Coconut) Cheese



A thousand times yummier and healthier than the instant packet type of macaroni cheese. As we experimented with coconut cream over the years, we tried many old familiar dishes.

You will need:
Macaroni
Coconut cream
Onion chopped finely
Capsicum
Tomatoes or other veggies chopped finely.
(Optional)
Protein – e.g.. Tofu, gluten , cooked beans etc.
Fresh and / or dried basil.


Method:
Cook macaroni and drain.
Sauté the veggies then add coconut cream, protein, salt and herbs.
Cook over low heat until coconut cream thickens a little.
OR
Cook coconut white sauce mixture, then add the sautéed veggies to it.
Fold the sauce / veggie mixture into the macaroni and then bake in the oven, or serve immediately.
*Good with tomato sauce (ketchup)!
