This is a favourite dish to begin a wedding feast (usually with chicken and shrimps). It tastes better without those ingredients though when we make it, we use no sugar, so it obviously tastes different to when other people make it.
You will need:
Head Cabbage – shredded
Carrot – shredded
Cucumbers – chopped finely
Tomatoes – chopped finely
Spring Onions – chopped finely
Salad herbs (basil, mint, and 2 other main ones- English name unknown to me!) or any favourite fresh herbs will work. Chopped finely or leave as whole leaves.
Red onions – chopped finely
Crushed roasted peanuts.
Lime/lemon juice.
Optional – glass noodles (bean thread) softened in water and dry seaweed (Nori sheets) cut in thin strips.
Method:
Mix all ingredients together. Some people like to mix the cabbage and carrot with lime juice to begin with, so they soften, but it is a matter of personal preference as I see it.
Leave to stand for ½ hr or so
Serve as is, or with rice, or put spoonfuls in rice papers (spring roll papers) and wrap up neatly. No need to fry – just eat as they are.
